The Makhwan peppercorn พริกไทย (Zanthoxylum limonella Alston) is a member of the citrus or Rutaceae family, and grows naturally in the mountainous forest regions of Northern Thailand, above 500m elevation. It is a relative of Sichuan pepper 花椒 (Zanthoxylum simulans / bungeanum) grown in SW China, and Sansho pepper 山椒 (Zanthoxylum piperitum) grown in Japan.

Makhwan is an important ingredient in many Northern Thai dishes, lending its citrus-like flavor and a mild numbing sensation to the complexity of Northern Thai flavor profiles.

Our Makhwan is sourced from small-holder farmers in Phrae and Nan provinces. Our farmers sun-dry their pepper for approximately ten days immediately after harvest. Sold locally still on the stem, we clean up most of the stems, before packaging.  They are also fragrant, though, so the few that remain can be used like the peppercorn itself.
