Kibe Kimem is our special blend of mixed spices used to make neter kibe. Ingredients include: Korerima, Beso bela, Koseret, ginger, garlic.
"Ye'kibe qemam" or "kibe spice" is a generic term for a blend of spices used in Ethiopian butter clarification, also known as manteria. The spices are mixed into the butter while it's being clarified, a process called mantering.
Some common spices used in manteria include: onion, garlic, ginger, cardamom, black cumin, white cumin, turmeric, fenugreek, sacred basil, and koseret.
Niter kibbeh is a type of clarified butter that's similar to ghee, but with the addition of spices. This clarified butter has a higher smoke point and longer shelf life than regular butter. The spices give niter kibbeh a distinct, spicy aroma. Β It's unique and delicious, and our Kibe Kimem is what you need to create it at home!
The recipe for Niter kibbeh: Mix one table spoon of Kibe Kimem seasoning per two pounds of butter and bring to a gentle rolling boil for 30 minutes at medium/low heat. Let cool and strain.
