### Ingredients:
For Homemade Tortillas:
- 2 cups Masienda Masa Harina
- 1.5 cups warm water (approximately)
- 1/2 tsp salt
For Quesadillas:
- 1 medium head of cauliflower, cut into 1-2" florets
- 2 tbsp olive oil
- 1 tsp smoked paprika
- Salt and pepper, to taste
- 1 cup cheddar cheese, shredded
- 1 cup Monterey Jack cheese, shredded
- 1 medium red onion, thinly sliced
- 2 cloves of garlic, minced
- Fresh cilantro, chopped (for garnish)
- Lime wedges (for serving)
- Avocado (for garnish)
- Sour cream or Greek Yoghurt (for serving)
### Instructions:
#### Making the Tortillas:
1. In a large bowl, mix the Masienda Masa harina with the salt. Gradually add warm water, kneading as you go, until a dough forms. It should be firm and springy, not sticky or dry. Add more water or masa harina as necessary to achieve the right consistency.
2. Divide the dough into 16 equal portions and roll each into a ball.
3. Press each ball using a tortilla press lined with plastic wrap, or roll out with a rolling pin between two pieces of plastic wrap, to about 1/8-inch thickness.
4. Heat a dry skillet over medium-high heat. Cook each tortilla for about 30 seconds on each side or until they begin to show brown spots. Keep cooked tortillas warm under a clean kitchen towel.
#### Roasting the Cauliflower:
1. Preheat your oven to 425°F (220°C).
2. Toss cauliflower florets with olive oil, smoked paprika, salt, and pepper. Spread on a baking sheet in a single layer.
3. Roast in the preheated oven for 20-25 minutes or until golden brown and tender, stirring halfway through.
#### Assembling and Cooking the Quesadillas:
1. Lay out 8 tortillas on a flat surface. Evenly distribute the roasted cauliflower, red onion, minced garlic, cheddar cheese, and Monterey Jack cheese among them.
2. Top each with the remaining tortillas, pressing down gently to adhere.
3. Heat a large non-stick skillet over medium heat. Carefully place a filled quesadilla in the skillet and cook until the bottom tortilla is golden brown and crispy, about 3 minutes.
4. Flip the quesadilla carefully and cook the other side until the cheese is fully melted and the second tortilla is crispy, another 2-3 minutes.
5. Repeat with the remaining quesadillas.
6. Cut the quesadillas into wedges, garnish with fresh cilantro, and serve immediately with lime wedges on the side.
