How to Make Niter Kibbeh with Kibe Kimem

Creating your own Niter Kibbeh at home is simple and starts with Kibe Kimem, a traditional Ethiopian spice blend packed with ingredients like korerima, beso bela, koseret, ginger, garlic, and more. To make it, melt two pounds of unsalted butter in a saucepan over medium heat. Once melted, add one tablespoon of Kibe Kimem, stirring to combine. Allow the mixture to gently simmer for about 30 minutes, letting the spices infuse the butter while the milk solids separate and sink to the bottom. Once done, remove from heat, let it cool slightly, and strain the liquid through a fine mesh or cheesecloth to remove the solids.
