A fiery North Indian curry traditionally used for mutton but delicious on everything from chicken to chickpeas.

Ingredients: chilies, onion, garlic, salt, coriander, cumin, fennel, green and black cardamom, cinnamon, turmeric, pepper, mustard.

7 oz by weight, about a cup by volume, as shown.
