Mahleb (also spelled mahlepi, mahaleb, or mahleb spice) is a finely ground spice made from the kernels inside the pits of the St. Lucie cherry (Prunus mahaleb), a wild cherry native to the Middle East and Mediterranean.

Mahleb is one of those quietly complex spices:
- Cherry–almond hybrid
- Slight bitter almond / marzipan note
- Hints of rose, vanilla, and warm spice
- A faint fermented / wine-like depth
It’s subtle but distinctive—more of a top-note aromatic than a dominant flavor.

Mahleb is especially tied to Eastern Mediterranean baking:
