Kapok buds, also called marathi moggu, silk cotton buds, or Ceiba pentandra, are the dried flower buds of the kapok or silk cotton tree. Dark, twisted, and caper-like in shape, they're a treasured whole spice in South Indian cooking, especially in Karnataka and Chettinad kitchens.

Despite the name "marathi," this spice is most closely tied to the cooking of Karnataka. It is rarely found outside Indian markets, and it gives dishes a depth that's hard to get from any other spice.

Flavor & Aroma

  • Woody, warm, and pungent
  • Peppery and slightly mustard-like when fried
  • Camphor-like fragrance once heated
  • Hints of nutmeg and black cardamom
  • Slightly bitter finish

Where You'll Find It

  • Bisi bele bath, Karnataka's spiced rice-and-lentil dish
  • Chettinad masala for chicken and mutton curries
  • Karnataka-style biryanis such as donne biryani
  • Sambar powder, saagu, kootu, vangi bath, puliyogare, and other South Indian rice dishes

How to Use It

  • Always cook before eating; kapok buds are not used raw.
  • Fry whole in hot oil or ghee during tempering until puffed and fragrant.
  • Dry roast briefly, then grind with other spices for masalas.
  • Use sparingly: 1-2 buds are enough for most family-size recipes.
  • Pairs well with cinnamon, cloves, black pepper, and coriander.
