Explore three distinct expressions of cardamom in one set: 1 oz each of Green, Black, and White Cardamom — 3 oz total. Though all are aromatic members of the ginger family, their flavors and culinary roles are quite different.

🌿 Green Cardamom

The most familiar and delicate of the three. Green cardamom is sweet, floral, citrusy, and intensely aromatic.

Best for: chai, coffee, baked goods, rice dishes, curries, desserts, and sweet spice blends.

🔥 Black Cardamom

Large, dark pods traditionally dried over fire, giving them a deep smoky character. Black cardamom is earthy, resinous, and savory rather than sweet.

Best for: meat dishes, biryanis, stews, garam masala, lentils, and long-simmered savory dishes.

🌾 White Cardamom

Also known as Bai Dou Kou, white cardamom has a warm, earthy, slightly camphor-like aroma. It is less floral than green cardamom and much less smoky than black.

Best for: Chinese and Southeast Asian soups, braises, broths, meat dishes, and aromatic spice blends.

🧂 A Simple Usage Principle

Think of them this way:

Green = bright and fragrant
Black = dark and smoky
White = warm and savory

Use green cardamom when you want fragrance, black cardamom when you want depth, and white cardamom when you want a gentle aromatic warmth in savory cooking.

Pods can be lightly cracked and added whole to simmering dishes, then removed before serving. For stronger flavor, remove and grind the seeds.

🧂 Try Them Together

The three cardamoms can also be layered to create a broader, more complex aroma.

  • Green + Black: Excellent in biryani, curries, lentils, and meat dishes. Green adds lift and fragrance; black adds smoky depth.

  • Green + White: Good for rice, chicken, lighter curries, broths, and aromatic teas. Bright and floral on top, warm and savory underneath.

  • Black + White: A particularly good combination for beef, lamb, pork, braises, and long-simmered broths. Deep, earthy, and warming without much sweetness.

  • All Three: Try one pod of each in a pot of rice, a curry, stew, or rich broth. Black provides the base, white fills out the middle, and green supplies the bright aromatic top note.

Simple rule: when combining them, use black cardamom most sparingly. Its smoky flavor is powerful. Start with roughly 1 black pod for every 2–3 green or white pods, then adjust to taste.
