Bright green (green) when fully mature, these slender and fresh chiles, when dried, are referred to as Bird chiles. Being green is unusual. They are relatively, but not insanely, hot in flavor and the heat is 7-8 out of 10, or50,000-100,000 SHU on the Scoville scale.
In our view a single pepper diced up (include the seeds) and tossed into a pan with your other liquid ingredients imparts just the right amount of heat after 15 minutes of cooking, almost as an buzzy aftertaste, certainly enough to give your lips a glow. You don't need much!
